Grasshopper Salad

Ingredients
- 3 ounces lime gelatin
- 1 cup boiling water
- 1 pint vanilla ice cream
- 1⁄4-1⁄2 cup miniature chocolate chip
- 1⁄2 teaspoon peppermint extract (optional)
Directions
- In a large bowl mix gelatin powder and boiling water.
- Let sit until starting to set.
- Stir in ice cream until well blended.
- Stir in mini morsels and peppermint extract, if using.
- Pour into 6 dessert dishes.
- Chill until firm.
