Granola Espresso Banana Muffins

Ingredients
- 1 tablespoon butter
- 1⁄3 cup fat free sour cream
- 3 bananas (very ripe)
- 2 egg whites
- 1 teaspoon vanilla
- 1 tablespoon instant espresso
- 1 tablespoon milk
- 1⁄2 cup sugar
- 1 1⁄4 cups flour (unbleached)
- 1⁄2 teaspoon salt
- 1 teaspoon baking soda
- 1⁄4 cup flax seed meal
- 1 cup granola cereal (with almonds)
Directions
- Melt butter and mix with non-fat sour cream.
- Beat egg whites a little and mix with butter/sour cream mixture.
- Smash bananas and mix in instant espresso, vanilla, milk and 1/2 cup granola, and mix with butter/sour cream/egg white mixture.
- Sift flour and sugar, and mix in flax seed meal, soda and salt.
- Mix dry and wet ingredients together.
- Grease 12-muffin tin and divide batter equally.
- Sprinkle each muffin with the remaining granola.
- Bake at 350 degrees and until toothpick comes out clean.
