Granola Bars With Coconut and Dried Fruit

Ingredients
- 3 cups quick-cooking oatmeal
- 2⁄3 cup whole wheat pastry flour
- 3⁄4 teaspoon baking soda
- 3 tablespoons dark brown sugar
- 1 teaspoon vanilla
- 1⁄3 cup coconut oil
- 1⁄3 cup honey
- 1⁄4 cup coconut flakes
- 1 1⁄2 tablespoons dried figs
- 1 1⁄2 tablespoons dates
- 1 1⁄2 tablespoons prunes
Directions
- In a food processor, chop dried fruit.
- Pour boiling water to cover.
- Let fruit stand 2 minutes, then drain water.
- Mix together oatmeal, flour, baking soda, brown sugar.
- Mix together vanilla, oil, honey together. Add to dry ingredients.
- Stir in the dried fruit and coconut.
- Mix well!
- Spread in a 9 x 13 inch greased pan.
- Bake at 325 F for 20 minutes.
- Allow to cool for 10 minutes.
- Cut into bars.
