Granola Bars With Coconut and Dried Fruit

A yummy recipe that the whole family will love. Suitable for people with milk, egg, nut allergies. I based it on a granola recipe I found at http://alifelesssweet.blogspot.com/2008/07/chewy-granola-bars.html but I changed some ingredients. I use Tupelo honey to give it a great subtle flavor. Use unsweetened coconut, if you can find it. Show more

Directions

  1. In a food processor, chop dried fruit.
  2. Pour boiling water to cover.
  3. Let fruit stand 2 minutes, then drain water.
  4. Mix together oatmeal, flour, baking soda, brown sugar.
  5. Mix together vanilla, oil, honey together. Add to dry ingredients.
  6. Stir in the dried fruit and coconut.
  7. Mix well!
  8. Spread in a 9 x 13 inch greased pan.
  9. Bake at 325 F for 20 minutes.
  10. Allow to cool for 10 minutes.
  11. Cut into bars.
