Granola Bars

Ingredients
- 1 1⁄2 cups rolled oats
- 1⁄4 cup sunflower seeds
- 1⁄4 cup pumpkin seeds
- 1⁄3 cup almonds
- 1⁄3 cup chopped walnuts
- 1⁄4 cup ground flax seeds
- 1⁄4 cup brown sugar
- 4 dried mangoes, slices diced
- 1 dash shredded coconut
- 1 teaspoon cinnamon
- 1 teaspoon kosher salt
- 1 1⁄4 cups soymilk, light
- 1 egg
- 1 teaspoon vanilla
Directions
- Combine all ingredients in a big bowl. Line a pan(s) with parchment and spread batter into pan. Bake at 375* for around 30 minutes.
- NOTE: Kesley reports she used an 8×8 pan and a 4×6 pan together and the batter was about half an inch thick. When going into the oven, the mix will be watery and should firm up.
