Granny's Pineapple Upside Down Cake

this is an old recipe from my grandmother...made in a cast iron skillet

  1. Beat egg whites stiff.
  2. Add 2 egg yolks. Gradually add sugar.
  3. Fold in the dry ingredients that have been mixed together.
  4. Add water and vanilla.
  5. Melt butter in cast iron skillet.
  6. Sprinkle with brown sugar; arrange pineapple rings on top.
  7. Pour batter over the fruit in skillet.
  8. Bake at 325 for 30 minutes.
  9. Remove from oven and invert on serving plate.
