Granny Royse's Coconut Cream Pie

Ingredients
- 3⁄4 cup sugar
- 1⁄3 cup all-purpose flour
- 1⁄4 teaspoon salt
- 2 cups milk
- 3 egg yolks
- 1 cup coconut
- 2 tablespoons butter
- 1 teaspoon vanilla
- 3 egg whites
- 6 tablespoons sugar
- 1⁄3 cup coconut
pie crust
- 1 1⁄3 cups all-purpose flour
- 1⁄2 cup vegetable shortening
- 1⁄2 teaspoon coarse salt
- 3 tablespoons ice water
Directions
- In saucepan combine sugar flour and salt, gradually stir in milk, ‘cook and stir over medium heat until it thickens . Cook 2 minutes longer.
- Remove from heat add 1 cup of coconut. Put a 3 egg meringue with 1/3 coconut sprinkled on top.
- Stir in small amounts hot mixture into yolks return to hot mix, cook 2 minutes stirring constantly add vanilla and butter .cool and pour into baked shell.
- Beat egg whites until stiff, add sugar beat again, spoon onto pie. Bake at 400 until light brown.
