  1. Wash and dry chicken. Season with salt and pepper.
  2. Put flour, salt and pepper in a medium paper bag, shaking to mix.
  3. Add half the chicken pieces, shaking gently to coat chicken. Remove chicken to rack and coat rest.
  4. Fill cast iron skillet with enough oil to reach 1/4 inch. Heat over medium-heat. Place chicken in oil, cooking until golden brown. Turn and brown other side.
  5. Pour oil off and lower the heat to medium-low. Partially cover skillet and cook for 40 minutes more.
