Grandmother's Carrot Salad

Ingredients
- 2 lbs carrots
- 1 large onion, Sliced thin
- 1 green pepper, Sliced
- 1 (10 3/4ounce) can condensed tomato soup
- 1⁄2-3⁄4 cup olive oil
- 3⁄4 cup vinegar
- 1 teaspoon salt
- 1 cup sugar
- 1 teaspoon dry mustard
Directions
- Peel carrots and cut into rounds. Cook until just tender and drain.
- Combine all ingredients except the first three to make the marinade/dressing.
- Add carrots to the marinade while still hot.
- Add peppers and onions and mix well.
- Place in airtight container and store in the refrigerator.
- Stir occasionally (2 or 3 times a day) for best flavor.
