Grandma's Crisp Cut Pineapple Pie

A refreshing, delicious pineapple pie that my grandma used to make.

Directions

  1. Line an 8" pie pan with pastry (I use my Aunt Nancy's Flaky Pastry Pie Crust, found here in this site).
  2. In a saucepan, combine undrained pineapple with cornstarch, sugar and salt. Cook until thick and clear, stirring constantly.
  3. Remove from heat and stir butter and lemon juice.
  4. Pour into pastry lined pan.
  5. Roll out and cut remaining pie crust into strips and weave to make a lattice top pie.
  6. Bake at 425° for 25-30 minutes.
