Grandma Addie's Cheesecake

  1. Preheat oven to 350 (325 if using convection oven).
  2. Pie Crust: Place graham crackers (usually one standard wrapped bunch of graham crackers will equal 1 1/4 cups), sugar, and butter in blender and blend until well incorporated (does not need to be super smooth).
  3. Press graham cracker mixture into pie tin or 9 inch cake pan. Use a flat bottomed cup or measuring cup to help create flat bottom and even corners.
  4. Filling: Blend 2 packages of cream cheese, 1/2 cup sugar, 2 eggs, and 1 tsp of vanilla extract until smooth. Pour into pie crust.
  5. Bake at 350 for 25 mins (325 if using convection oven), remove and let cool for 20 mins.
  6. Topping: Blend 1 cup sour cream, 2 Tablespoons sugar, and 1 teaspoon vanilla extract until smooth. Pour onto first layer of cheesecake.
  7. Bake 350 for 10 mins (325 if using convection oven), remove, let cool, and refrigerate.
