Grams Carrot Cake

Ingredients
- 2 cups plain flour
- 2 cups sugar
- 4 eggs
- 3 cups carrots
- 1 1⁄2 cups corn oil
- 2 teaspoons cinnamon
- 1⁄2 teaspoon salt
- 1 teaspoon baking powder
- 2 teaspoons baking soda
- 1⁄2 teaspoon vanilla
Frosting
- 1 cup chopped pecans
- 1 box powdered sugar
- 1 teaspoon vanilla
- 1 -8 ounce cream cheese
- 1⁄2 cup oleo
Directions
- Cake Mix: Shredd carrots. Mix all dry ingredients, add oil, eggs and vinilla. Blend well. Bake @ 350' for 30-minutes or until done. Pour mix in 3-9 inch pans or loaf pans.
- Iceing Mix: Mix cream cheese, oleo, sugar, vanilla and pecans. Spread mixture on cake.
