Goodwood's Potato Salad

A family favorite. Originated from the Goodwood Barbecue Company, Boise, Idaho, and printed in the Idaho Statesman 5/22/2002.

• Yields: 1/2 cup

Ingredients

• 2  cups Miracle Whip
• 7  hard-boiled eggs, chopped
• 1⁄3 cup  sweet relish
• 1⁄2 cup  diced celery
• 1⁄3 cup  finely sliced green onion
• 3⁄4 tablespoon yellow mustard
• 1⁄4 cup  diced yellow onion
• 3⁄4 tablespoon salt
• 5  lbs  cooked cooled, peeled baking potatoes (cut in 3/4-inch cubes)

Directions

1. Mix all ingredients together in a large mixing bowl.
2. Chill for a minimum of 1 hour and serve.
