Golden Smashed Potatoes

Ingredients
- 2 1⁄2 lbs yukon gold potatoes, quartered
- 1 tablespoon olive oil
- 1 teaspoon mustard seeds
- 1 cup skim milk
- 2 tablespoons maple syrup
- 1⁄2 teaspoon ground turmeric
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
Directions
- Place potatoes in a large saucepan; cover with water. Bring to a boil; reduce heat and simmer 15 min or til tender. Drain; return potatoes to pan.
- While potatoes cook, heat oil in a small saucepan over medium heat. Add mustard seeds; cook 2 min or til seeds begin to pop. Add milk, syrup, and turmeric; simmer til reduced to 1/2 c (about 10 min). Add milk mixture, salt and pepper and mash to desired consistency.
