Golden Puff Pancake (Aka Dutch Baby)

  1. In a blender or food processor, combine eggs, flour, milk, sugar, vanilla and salt; blend until smooth.
  2. Let batter rest while oven preheats to 425*. Place butter in a heavy, ovenproof skillet; place in hot oven for 1-2 minutes to melt (do not burn).
  3. Carefully swirl pan to coat with butter; pour in batter.
  4. Bake for 18-20 minutes, until pancake is puffy and deeply golden.
  5. Cool 5 minutes, then liberally dust with powdered sugar; cut into 4 wedges and serve with jam or fruit.
