Golden Glazed Sweet Potatoes or Yams

Ingredients
- 8 medium sizes sweet potatoes
- 1⁄4 cup brown sugar
- 1⁄2 cup light corn syrup
- 1⁄2 lemon lemon, zest of
- 1 tablespoon lemon juice
Directions
- Scrub raw sweet potatoes and Cook in 1" of boiling salted water, covered, for 25-30 minutes or until tender ( skip step for canned yams). Cool and remove skins.Cut into large chunks.
- Combine butter, brown sugar, corn syrup, lemon juice and grated rind into a large frying pan. Bring to boiling. Boil 5 minutes, stirring ( careful not to burn).
- Add sweet potatoes ( or Yams).
- Cook over low heat, basting often, 10-15 minutes or until potatoes are piping hot and well glazed.
