Golden Glazed Sweet Potatoes or Yams

Adapted from a newspaper clipping. Substitute 2 large cans of Yams for sweet potatoes if you wish .

  1. Scrub raw sweet potatoes and Cook in 1" of boiling salted water, covered, for 25-30 minutes or until tender ( skip step for canned yams). Cool and remove skins.Cut into large chunks.
  2. Combine butter, brown sugar, corn syrup, lemon juice and grated rind into a large frying pan. Bring to boiling. Boil 5 minutes, stirring ( careful not to burn).
  3. Add sweet potatoes ( or Yams).
  4. Cook over low heat, basting often, 10-15 minutes or until potatoes are piping hot and well glazed.
