  1. Separate cauliflower into flowerets.
  2. Cook, covered in one inch of boiling, lightly salted water until tender (about 8 minutes) Cool Dip flowerets in beaten egg, then in bread crumbs.
  3. Melt butter in heavy skillet and fry until golden brown Sprinkle with cheese Serve immediately.
