Goji Sweet Sauce

This recipe describes an interesting dish that can be enjoyed anytime - breakfast, lunch or dinner.

Yields: 1 cup

Ingredients

  • 12 cup  goji berry, pre-soaked for 1 hour
  •  water, of soaked goji berry
  • 12 cup blackberries or 12 cup blueberries or 12 cup raspberries
  • 1  cup  young coconut meat (or 1 cup reconstituted dried coconut flakes)
  • 2  pitted dates (or other sweetener or 1 tbsp raw honey or agave nectar or rice syrup or barely syrup or maple syrup)
  • 30  ml  coconut water or 30  ml water or 30  ml  goji  juice
  • 12 teaspoon cinnamon
  • 12 teaspoon vanilla essence

Directions

  1. Pre-soak the goji berries in water for 1 hour. Put all the ingredients in a blender and blend until smooth. Add more liquid as desired. One possible variation among many is adding coconut cream instead of coconut water.
