Going Greek Pancakes

Pancakes made with Greek yogurt. These are inspired by the Edna Mae's Sour Cream pancakes from the Pioneer Woman, but even better with the added protein of plain Greek Yogurt, These are the pancakes for people who don't think they like pancakes, and the recipe is large enough to feed a hungry family. Directions

  1. In a medium bowl, whisk together eggs, vanilla. Set aside.
  2. In a separate large bowl, mix together flour,sugar, baking soda, and salt.
  3. Mix the Greek yogurt with the dry ingredients just enough to combine.
  4. Whisk in the egg mixture.
  5. Drop batter by 1/4 cup servings onto hot griddle.
  6. Cook on the first side until bubbles start to form on the surface and edges are starting to brown.
  7. Flip to the other side and cook a couple minutes until fully set.
  8. Serve with butter and maple syrup.
