  1. Preheat oven to 375°F.
  2. Arrange bread on 2 baking sheets.
  3. Brush olive oil over the bread.
  4. Bake until bread is golden and crisp, about 15 minutes.
  5. Blend the goat cheese and cream cheese in a food processor until smooth and creamy.
  6. Add the parsley, thyme, and lemon peel.
  7. Using the on/off button, pulse just to blend.
  8. Season with salt and pepper.
  9. Spread cheese mixture over toast.
  10. Sprinkle with chives and more pepper.
