Goat Cheese, Arugula and Strawberry Salad

A taste of summer. Strawberries and sharp goat cheese with peppery arugula.

Ingredients

  • 2  ounces arugula
  • 8  ounces strawberries, washed and hulled
  • 5  ounces  goat cheese, crumbled
  • 2  tablespoons  sunflower oil
  • 2  tablespoons extra virgin olive oil
  • 1  tablespoon  balsamic vinegar
  • 12 teaspoon sugar

Directions

  1. Divide the arugula leaves between 4 plates.
  2. Slice the strawberries and scatter on top of the leaves with the cheese.
  3. Whisk together the oils, vinegar and sugar.
  4. Drizzle over the salad and serve.
