Goat Cheese and Leek Tart

From Martha Stewart. This is one of my favorite recipes.

Serves: 4

Ingredients

  • 2  cups leeks, thinly sliced
  • 1  tablespoon olive oil
  • 6  ounces  fresh goat cheese
  • 2  ounces cream cheese
  • 2  tablespoons milk
  • 3  large  egg yolks
  • 1  teaspoon fresh thyme
  • 1  tablespoon water
  • 1  pie crust
  •  salt and pepper

Directions

  1. Preheat oven to 350 degrees. Toss leeks with oil, and season with salt and pepper to taste.
  2. Mix goat cheese, cream cheese, milk, 2 egg yolks, and thyme. Season with salt and pepper. In a different bowl, whisk together remaining egg yolk with water.
  3. Roll out dough to a 13 in, round. Place on baking sheet. Spread goat cheese mixture on crust leaving a 2 in border. Sprinkle leeks evenly over the cheese. Fold edge of dough over filling, pinching together as needed. Brush with an egg wash.
  4. Bake until crust is golden brown, about 1 hour.
