Gnocchi With Cottage Cheese & Bacon

  1. Prepare the gnocchi, according to package directions.
  2. While gnocchi is cooking, fry the pound of bacon in a skillet.
  3. Drain the bacon on paper towels and pat to remove excess grease.
  4. Cut or break (depending on how crispy you like your bacon) the bacon into 1-inch pieces.
  5. Drain the gnocchi and put back into boiling pot.
  6. Add cottage cheese and mix well.
  7. Add bacon pieces last to maintain crispness.
  8. Salt and pepper to taste, if desired.
  9. Leftovers can be heated in a pan with a little butter.
