G'Ma RoRo's Lemon Bars

When my Mom passed away, I was given her original cook book she used when here and my dad were first married back in the 50's. I want to keep her memory alive, so I'm adding some of the recipes she used to make. I hope you enjoy! Show more

Directions

  1. Preheat oven to 350F.
  2. Greases a 9 x 13 baking dish.
  3. Mix together first three ingredients and press into the bottom of your baking dish.
  4. Bake for 20-25 minutes or until golden brown.
  5. Meanwhile, mix 4 eggs, 2 cups of sugar and lemon juice and zest.
  6. In another bowl, sift together 1/4 of flour and 1/2 tsp baking powder and add to egg mixture.
  7. Pour over baked crust and bake in oven an additional 25 minutes.
  8. Let cool completely, then sprinkle on powdered sugar and cut into bars.
