Gluten Free Matzah

Ingredients
- 1 cup gluten free oat flour
- 1⁄3 cup brown rice flour
- 2⁄3 cup tapioca flour
- 2 teaspoons xanthan gum
- 1 teaspoon salt
- 1⁄3 cup sunflower oil
- 1⁄2 cup water
Directions
- Preheat oven to 500.
- Combine dry ingredients. Place into stand mixer or food processor.
- Add oil and combine.
- Slowly add water while mixing/pulsing until moist, well combined dough ball is formed. You may not need all the water.
- Divide dough into 4 equal parts.
- Press each ball of dough into ungreased baking sheet until very thin.
- Pierce flattened dough with fork.
- Bake until edges are golden brown. Approximately 10 - 12 minutes.
