Gluten Free Matzah

Ingredients

  • 1  cup  gluten free  oat flour
  • 13 cup  brown rice flour
  • 23 cup tapioca flour
  • 2  teaspoons xanthan gum
  • 1  teaspoon salt
  • 13 cup  sunflower oil
  • 12 cup water

Directions

  1. Preheat oven to 500.
  2. Combine dry ingredients. Place into stand mixer or food processor.
  3. Add oil and combine.
  4. Slowly add water while mixing/pulsing until moist, well combined dough ball is formed. You may not need all the water.
  5. Divide dough into 4 equal parts.
  6. Press each ball of dough into ungreased baking sheet until very thin.
  7. Pierce flattened dough with fork.
  8. Bake until edges are golden brown. Approximately 10 - 12 minutes.
