Gingered Ketchup

Ingredients
- 1⁄4 cup white wine vinegar
- 1⁄4 cup red onion, minced
- 2 tablespoons fresh ginger, minced
- 2 tablespoons sugar (or to taste)
- 1⁄4 cup ketchup
- 1 tablespoon jalapeno, seeded and minced
- 1 tablespoon fresh lime juice
- salt
Directions
- Combine vinegar, onion, ginger and sugar in a small saucepan. Bring to a simmer, cooking until vinegar is nearly evaporated.
- Off heat, stir in ketchup, jalapeno, lime juice and salt. Chill until ready to serve.
