Gingered Carrot and Quinoa Salad

Ingredients

  • 2  cups  cooked quinoa
  • 2  cups  coarsely shredded carrots
  • 1  cup  thinly sliced green onion
  • 1  tablespoon  grated fresh ginger
  • 1  teaspoon  minced  jalapeno pepper
  • 3  tablespoons  unseasoned rice vinegar
  • 1 12 tablespoons  vegetable oil
  • 2  teaspoons honey
  •  sea  salt and black pepper
  • 2  tablespoons toasted sesame seeds

Directions

  1. In a large bowl combine quinoa, carrots and green onions.
  2. In a small bowl, whisk together ginger, pepper, vinegar, oil and honey. Add to quinoa mixture and toss to coat.
  3. Season to taste with salt and pepper. Cover and refrigerate for at least 30 minutes. Serve topped with sesame seeds.
