Gingered Carrot and Quinoa Salad

Ingredients
- 2 cups cooked quinoa
- 2 cups coarsely shredded carrots
- 1 cup thinly sliced green onion
- 1 tablespoon grated fresh ginger
- 1 teaspoon minced jalapeno pepper
- 3 tablespoons unseasoned rice vinegar
- 1 1⁄2 tablespoons vegetable oil
- 2 teaspoons honey
- sea salt and black pepper
- 2 tablespoons toasted sesame seeds
Directions
- In a large bowl combine quinoa, carrots and green onions.
- In a small bowl, whisk together ginger, pepper, vinegar, oil and honey. Add to quinoa mixture and toss to coat.
- Season to taste with salt and pepper. Cover and refrigerate for at least 30 minutes. Serve topped with sesame seeds.
