Gingerbread Muffins

Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1 teaspoon ground ginger
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon ground cinnamon
- 1⁄4 teaspoon ground cloves
- 1⁄2 cup sugar
- 1⁄2 cup applesauce
- 1⁄4 cup apple juice
- 1⁄4 cup molasses
- 1 egg (or egg replacement)
- 2 tablespoons oil
Directions
- Stir together dry ingredients.
- Add wet ingredients.
- Mix only until batter is lumpy.
- Pour into muffin pans.
- Bake at 350 for 20 to 30 min until set.
- Let cool.
