Gingerbread

Ingredients
- 3⁄4 cup boiling water
- 1⁄4 cup hot strong coffee
- 1 cup butter, room temperature
- 1 cup dark brown sugar
- 2⁄3 cup molasses
- 1⁄3 cup honey (or any mixture of molasses and honey)
- 3 large eggs
- 2 1⁄2 cups flour
- 1 1⁄2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 teaspoon allspice
- 1 1⁄2 teaspoons ground ginger
- 3⁄4 teaspoon nutmeg
- 1⁄2 teaspoon lemon peel
- 1 dash salt
- powdered sugar (optional)
Directions
- preheat oven to 325 degrees.
- grease 9x13 pan (preferably glass).
- pour boiling water/coffee over butter, sugar, molasses, and honey.
- stir until butter is melted.
- add eggs, beat well.
- mix dry ingredients.
- add dry to wet and mix until just combined.
- pour into pan and bake 1 hour.
- sprinkle top with powdered sugar (optional).
