Ginger Tofu Soup

Ingredients
- 1⁄2 lb firm tofu
- 2 teaspoons fresh ginger, minced
- 4 cups vegetable broth
- 3 tablespoons green onions
- 1 teaspoon olive oil
Directions
- Saute ginger and onions in olive oil.
- Add tofu and saute for a few more minutes.
- Add vegetable broth and heat through before serving.
