Ginger Tea

Serves: 2

Yields: 2 cups

Ingredients

  • 1  fresh ginger, thinly-sliced into 12 pieces and pounded
  • 1  tablespoon honey (to taste)
  • 3  cups water

Directions

  1. Put ginger and water in a small saucepan and bring to a boil. reduce heat to medium-low and simmer 20 to 25 minutes.
  2. Strain slices and discard. Stir in honey. I generally use 1 to 1 1/2 tsp of honey for a cup. I don't worry too much about peeling the ginger, as long as it has been cleaned.
