Ginger Soy Dressing

Yields: 1 1/2 cups
Ingredients
- 3⁄4 cup v 8 vegetable juice
- 1⁄3 cup vegetable oil
- 2 tablespoons soy sauce
- 2 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1 tablespoon grated fresh ginger
- 1 tablespoon dry sherry
Directions
- In covered jar, combine all ingredients. Shake until well blended. Cover; refrigerate until serving time, at least 2 hours.
- When ready to use, shake again. Serve over salad greens or pasta salads.
