Ginger Pork With Peach Chutney

Ingredients
- 1 lb pork tenderloin
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 teaspoon oil
- 1⁄3 cup peach chutney (sub mango chutney)
- 3 tablespoons orange juice
- 1 teaspoon ginger, fresh grated
- 1⁄2 teaspoon five-spice powder
Directions
- Trim fat from loin. Cut crosswise into 8 slices. Flatten slightly with palm of hand. Sprinkle with salt & pepper.
- Heat oil in medium skillet over medium-high heat. Cook pork about 4 minutes, turning halfway. Stir in remaining ingredients, reduce heat. Cover and simmer 4-6 minutes or until 160°. Set aside pork and continue to cook sauce for 1-2 minutes, stirring constantly. Serve over pork.
