Ginger Orange Carrots

Ingredients
- 2 lbs carrots
- 1⁄4 cup unsweetened orange juice
- 2 teaspoons ginger
- 2 teaspoons sesame oil
- 2 teaspoons soy sauce
- 2 -3 tablespoons toasted sesame seeds
- 1 tablespoon honey (optional)
Directions
- Prepare carrots per your preference (I usually peel and then cut 1/2" slices on a diagonal and cook in a pressure cooker).
- While carrots are cooking, peel and grate enough fresh ginger to make 2 teaspoons.
- Add ginger and the remaining ingredients, except the sesame seeds, to a saucepan and bring to a boil; remove from heat.
- Transfer cooked carrots to serving dish, pour sauce over top and sprinkle with toasted sesame seeds.
- Can add 1 tablespoons of honey to the sauce before bringing it to a boil if you like some sweetness, but we prefer allowing the zing of the ginger to shine through.
