Ginger Dressing

Yields: 1 1/2 cups
Ingredients
- 1⁄2 cup sliced onion
- 1⁄2 cup vegetable oil
- 1⁄4 cup white vinegar
- 1⁄4 cup soy sauce
- 2 teaspoons sugar
- 2 tablespoons chopped gingerroot (I use ginger paste)
- 1⁄2 teaspoon lemon juice
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon pepper
Directions
- Combine all ingredients into a blender.
- Blend on low for 1 minute, then high for 30 seconds.
- Add additional salt or pepper to taste.
- Chill.
- Stir before serving on salad.
