Ginger Chocolate Chewy Biscuits

Yields: 20-30 biscuits
Ingredients
- 1 1⁄2 cups flour
- 1⁄2 teaspoon ginger
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon clove
- 125 g butter
- 1 tablespoon ginger, grated
- 1⁄2 cup brown sugar
- 1⁄2 cup treacle
- 1 1⁄2 teaspoons hot water
- 1 teaspoon bicarbonate of soda
- 210 g dark chocolate, chopped
- 50 g glace ginger, fine dice
Directions
- Cream butter and ginger for 4 minutes Add brown sugar and beat inches
- Sift dry ingredients and add to butter mix.
- Mix hot water and bicarb and add.
- Fold chopped chocolate.
- Chill for 2 hours and the roll into balls.
- Refrigerate again for at least ½ hour. Roll in sand sugar and bake at 160C for 12-15 minutes.
