Ginger Chicken

Ingredients
- 1⁄2 cup soya sauce
- 1 teaspoon cornflour
- 1500 g chicken pieces
- 1 teaspoon chopped gingerroot
- 1⁄2 cup water
- 2 teaspoons sugar
- 2 tablespoons oil
- 425 g pineapple chunks
- 2 tablespoons lemon rind
Directions
- put soya sauce, sugar, cornflour and lemon rind in a large bowl.
- add chicken, coat with sauce.
- leave 1 hour.
- drain chicken.
- fry both sides in oil.
- add ginger, whole tin of pineapple and water.
- simmer gently 1 hour.
- serve with rice.
