Ginger Applesauce

Ingredients
- 10 Granny Smith apples, pared, cored, coarsely chopped
- 2 sticks cinnamon (2-1/2 inches)
- 1 cup apple juice
- 1 teaspoon lemon zest
- 1⁄4-1⁄2 cup packed brown sugar
- 1 1⁄2 tablespoons grated fresh ginger
- 1⁄4 teaspoon grated nutmeg
Directions
- Place apples, cinnamon, juice and zest in large saucepan or Dutch oven. Simmer covered, stirring occasionally, over medium-low heat until apples are soft, 20-25 minutes. Stir in sugar to taste, the ginger, and nutmeg.
- Cook until sugar is dissolved and sauce thickens, about 5 minutes. Serve warm or cold. Remove cinnamon sticks just before serving.
