Ginger Applesauce

For apple-picking season!

Yields: 6 cups

Ingredients

  • 10  Granny Smith apples, pared, cored, coarsely chopped
  • 2  sticks cinnamon (2-1/2 inches)
  • 1  cup  apple juice
  • 1  teaspoon lemon zest
  • 14-12 cup  packed brown sugar
  • 1 12 tablespoons  grated fresh ginger
  • 14 teaspoon  grated nutmeg

Directions

  1. Place apples, cinnamon, juice and zest in large saucepan or Dutch oven. Simmer covered, stirring occasionally, over medium-low heat until apples are soft, 20-25 minutes. Stir in sugar to taste, the ginger, and nutmeg.
  2. Cook until sugar is dissolved and sauce thickens, about 5 minutes. Serve warm or cold. Remove cinnamon sticks just before serving.
