German Potato Salad

A family favorite, often had on birthdays. The bacon dressing is the best part!

  1. Cut the bacon into 1 inch strips and fry on medium until almost crisp. While the bacon is frying, boil potatoes (skins on) until cooked, but not soft. In a separate pan mix the water, vinegar and sugar together and heat on low until sugar is dissolved. Add onion slices to bacon just before bacon is done. Add the salt and flour to UNDRAINED bacon/onion mixture. Quickly add the prepared, water/vinegar/sugar mixture to bacon and stir into a thick sauce. Turn off frying pan. Peel and slice the cooked potatoes and put into a large casserole. Add the sauce and stir to coat. Finish in oven until potatoes are soft.
