German Apple Pancake (Apfelfannkuchen)

2 giant pancakes. Slice each in quarters and serve like a warm pastry. Substitute other fruits for the apples. Show more

  1. Peel and thinly slice apples. Set aside.
  2. Beat eggs and flour with a whisk; beat in milk and salt. (Let batter rest while oven pre-heats.).
  3. Heat oven to 400 degrees.
  4. Place 2 round cake pans (9") in oven.
  5. When oven reaches 400 degrees and pans are hot, remove pans from oven and place 2 T butter in each pan. Rotate pans until butter has melted and coats bottom and sides of pans.
  6. Arrange half the apples in each pan. Divide batter evenly between pans.
  7. Mix sugar and cinnamon; sprinkle 2T sugar mixture over batter in each pan.
  8. Bake uncovered until puffed and golden brown, 20 - 25 minutes.
