Gazpacho

This is a recipe I developed after trying the gazpacho at Casa Botin in Madrid. One of our favorite hot weather meals! Show more

Directions

  1. Put all ingredients except tomato juice in blender and process until fairly smooth.
  2. Pour into large bowl and stir in tomato juice.
  3. Refrigerate for at least 2 hours before serving.
  4. Dice desired garnishes, put into small serving bowls, and let each person add whatever garnishes they like.
