Garlicky Yellow Rice

Ingredients
- 1 1⁄2 tablespoons olive oil
- 1 1⁄2 cups onions, chopped
- 1 3⁄4 cups long-grain rice, uncooked
- 6 garlic cloves, crushed
- 3 3⁄4 cups water
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon turmeric
- 1⁄2 teaspoon pepper
- green onion (optional)
Directions
- Heat oil in a large nonstick skillet over medium heat.
- Add onion, and saute 7 minutes or until tender.
- Add rice and garlic; saute 2 minutes.
- Add water and next 3 ingredients; bring to a boil.
- Cover, reduce heat, and simmer 23 minutes or until liquid is absorbed.
- Garnish with green onion tops, if desired.
