Ingredients

• 3⁄4 cup  fat-skimmed chicken broth
• 1⁄2 cup  loosely packed fresh basil leaf
• 3  cloves garlic, peeled
• 4  tablespoons  grated parmesan cheese
• 1  tablespoon olive oil
•  salt and pepper, to taste

Directions

1. Heat broth to boiling.
2. Combine ingredients in blender or foodprocessor; process until basil and garlic are minced.
3. (Or by hand,use a mortar and pestle: Mash basil and garlic together, then mixwith remaining ingredients.).
