Garlic Parmesan Primal Noodles With Scallops

Ingredients
- 2 tablespoons olive oil
- 1 tablespoon shallot, chopped
- 2 garlic cloves, minced
- 4 ounces sea scallops
- 1⁄2 zucchini, cut into noodles on a spiral slicer
- 2 tablespoons parmesan cheese, grated
- 1 tablespoon fresh basil leaf, chopped
- salt and pepper, to taste
Directions
- Heat the olive oil in a skillet over medium high heat. Add the shallots and garlic and cook for 1 minute.
- Add the scallops and sear until done (about 3 minutes per side).
- Remove from pan and add the zucchini noodles. Stir and cook noodles coating with the garlic and oil mixture. Season with salt and pepper.
- Serve the noodles with the scallops and top with the fresh basil.
