Gallagher's Steak House Potato Salad

Ingredients
- 5 lbs steamed red potatoes, cut into ½ inch pieces
- 1 lb steamed slim string bean, cut into 1 inch sections
- 1 cup chopped tomato
- 3⁄4 cup hard-boiled egg
- 1⁄2 cup chopped cooked bacon, ¼ inch diced
- 1⁄2 cup thin sliced red onion
- 1⁄2 cup Dijon mustard
- 1⁄2 cup red wine vinegar
- 1 cup olive oil
Directions
- Combine in a very large bowl: potatoes, eggs, bacon, onions, string beans, tomatoes, and eggs and toss.
- In a small bowl, whisk vinegar and mustard together, then slowly whisk in oil, drizzling in slowly.
- Pour dressing over potato salad in the large bowl.
- Season with 2 teaspoons of salt and 1 teaspoon of ground pepper.
