Galician Soup (Caldo Gallego)

Ingredients
- 1 lb haricot beans
- 3 potatoes
- ham bone
- 1⁄2 ounce lard or 1⁄2 ounce dripping
- 1 -2 beef bone
- 1⁄2 ounce flour
- 1 small cabbage
- salt and pepper
Directions
- Soak the beans in water for some hours.
- Put them in a saucepan with 2 qts. water and the bones; bring to the boil and simmer gently for about 3 hours.
- After 2 hours add the finely shredded cabbage, the peeled and quartered potatoes and the fat and flour, mixed; season to taste and simmer for a further hour.
