Fudgy Chocolate Butterscotch Cupcakes

Ingredients

• 1  cup unsweetened applesauce
• 1⁄4 cup white sugar (splenda) or 1⁄4 cup sugar substitute (splenda)
• 2  tablespoons brown sugar
• 1  teaspoon vanilla extract
• 1  egg
• 3⁄4 cup whole wheat flour
• 1⁄3 cup cocoa powder (Hershey's 100% Cocoa Special Dark)
• 2  teaspoons baking powder
• 1  teaspoon baking soda
• 1  dash salt
• 1⁄8 teaspoon cinnamon
• 1⁄2 cup  butterscotch chips

Directions

1. Fill cupcake tin with cupcake liners. Preheat over to 350°F.
2. Mix apple sauce, sugars, vanilla, beat in egg.
3. In a separate bowl mix flour, cocoa, baking powder, baking soda, salt, cinnamon.
4. Add flour mixture to wet mixture a little at a time, stir in butterscotch chips.
5. Spoon batter into cupcake liners.
6. Bake for about 20 minutes or until tops are firm to touch.
7. Dust with powdered sugar if desired.
