Fruity Rice Pudding

Ingredients
- 1 cup water
- 14 ounces no sugar added crushed pineapple
- 1 cup MINUTE White Rice
- 1 ounce sugar substitute (1 packet low calorie sweetner)
- 2 cups cool whip lite whipped topping
- toasted sliced almonds
Directions
- Mix water and pineapple. Microwave for 5 minutes on HIGH.
- Add rice and sweetner. Cover and let stand 30 minutes. Refrigerate 4 hours.
- Stir in whipped topping. Divide between 6 small bowls and garnish with almonds.
