Fruitcake

Ingredients
- 1 cup packed brown sugar
- 2 cups dried fruit
- 2 cups water
- 1⁄2 cup applesauce
- 3⁄4 cup brewed coffee
- 3 cups flour
- 2 teaspoons baking soda
- 1 teaspoon salt
- 4 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground cloves
Directions
- preheat oven to 350 degrees. grease and flour a 9x13 inch pan.
- in a saucepan, mix brown sugar, water, dried fruit, applesauce, and coffee. bring to a boil and boil for 3 minutes. remove from heat and let cool.
- in a large bowl, combine flour, baking soda, salt, and spices.
- when dried fruit mixture is cool, add to dry ingredients and mix well to combine.
- pour into prepared cake pan and bake for 30 to 40 minutes.
