Fruit Tartlets

Yields: 16 tartlets
Ingredients
- 3 tablespoons firm butter
- 2 1⁄2 cups Bisquick baking mix
- 1⁄2 cup quick-cooking oats
- 2 tablespoons sugar
- 1⁄2 cup milk
- 1 teaspoon vanilla
- 2⁄3 cup fruit preserves, any flavor
Directions
- Preheat oven to 375 degrees.
- Grease 2 cookie sheets.
- Cut butter into baking mix and oats until mixture resembles fine crumbs. Stir in sugar, milk and vanilla.
- Turn onto surface dusted with baking mix, roll in baking mix to coat. Shape into ball, knead 10 times.
- Roll into 14 inch square on surface dusted with baking mix. Trim irregular edges. Cut into sixteen 3 1/2 inch squares. Place 2 tsp preserves diagonally across eash square. Pinch remaining two corners firmly together over center of filling, transfer to cookie cheets.
- Bake 13 minutes or until golden brown. Cool 10 minutes.
- Drizzle with your favorite Glaze recipe.
