Fruit Sponge - Gluten Free

Ingredients
- 1 cup gluten-free flour
- 1 teaspoon gluten free baking powder
- 30 g butter
- 7⁄8 cup sugar
- 1⁄2 cup milk
- 1 large egg
- 1⁄2 teaspoon vanilla essence (optional)
- 3⁄4-1 kg fruit, any fruit (see note)
Directions
- Melt butter, add rest of ingredients.
- Place boiling fruit in a large casserole,.
- Pour sponge mix over.
- Place in preheated oven 180 C for 30-40 minutes until cooked.
